Situé à 7km du centre du village, les grottes de Sare vous proposent de vous restaurer sur place en juillet et en août (le midi uniquement). L'atelier est situé en plein du village de Larressore (3km d'Espelette). La famille Ainciart Bergara fabrique le makhila (ou makila) depuis plus de 200 ans en associant le bois de néflier, le cuir et différents métaux (laiton, maillechort, argent). L’atelier occupe deux lieux complémentaires : l’atelier de fabrication et une salle de projection. Le savoir-faire de l'atelier est inscrit à l'inventaire des métiers d'art rares dans le cadre de l'UNESCO pour la sauvegarde du patrimoine culturel immatériel. Revivez les voyages d'Antoine d'Abbadie dans sa demeure, érigée à la fin du XIXème siècle par Eugène Viollet le Duc. C'est dans la mise en œuvre d'Abbadia, son Château-Observatoire, qu'Antoine d'Abbadie nous dévoile le carnet de route de sa vie dédiée à la science, à l'homme et à Dieu. Entièrement meublées et restaurées, toutes les pièces du Château se visitent : l'observatoire et sa lunette méridienne, la bibliothèque, la chapelle, les chambres, les salons et boudoirs notamment. Construit entre 1864 et 1884, d'architecture néo-gothique, Abbadia est une des rares créations de l'illustre architecte Eugène Viollet le Duc. Il est classé "Monument Historique" et arbore le label "Maison des Illustres".

 Sur la route de l'Espagne, à 3 km de Saint Jean de Luz, ce château appartient à la même famille depuis 1341. C'est le dernier château fort du Pays Basque, agrandi au XVIème et au XVIIIème siècles. Il possède un très beau mobilier d'époque et en particulier une collection de tapisseries de Bruxelles du XVIème siècle. Le château d'Urtubie est un château du XIVème siècle, classé Monument Historique, très accueillant, meublé et décoré avec raffinement. Le roi Louis XI y séjourna en 1463 et Louis XIV érigea le domaine en vicomté en 1654. Au XIXème siècle, Soult puis Wellington y passèrent lors des guerres napoléoniennes. Le charme et la richesse historique de ce lieu incitent à la visite. Son parc à l'anglaise est de 6 ha. THE CHOCOLATE MUSEUM Located in our chocolate factory, the Chocolate Museum is a great way to punctuate a stay in Bayonne, a city whose history is closely linked to that of chocolate. Discover the cocoa bean and get to know this familiar and tasty treasure, from the cultivation of cocoa trees to the production of our delicacies. All this is enhanced by videos, an exhibition of old machines and an educational film. You can also observe our chocolate craftsmen at work in our "lab", only separated from you by a glass wall. Des valeurs et une histoire Je suis né à Saint-Jean-Pied-De-Port, magnifique campagne du Pays Basque, dans une famille d'agriculteurs de génération en génération. En 1990, j'ai créé mon atelier de conserves et salaisons. Artisan entouré d'une petite équipe motivée pour la réussite de notre activité, je perpétue mes traditions et fais découvrir sur rendez-vous notre savoir-faire par la visite de mon installation et la dégustation de mes meilleurs produits. À Bayonne, j'accueille mes visiteurs dans mon atelier de jambons, je leur montre saloir et séchoirs, et j'explique mon métier: c'est ce qui me fait le plus plaisir. Créée au départ pour ne rien cacher à mes clients de mes méthodes de travail, cette visite d'entreprise est très vite devenue un élément prépondérant de présentation et de transmission de mes valeurs. Nous travaillons en circuit court L'origine des porcs est le Sud-Ouest, les canards viennent des Landes et les légumes sont fournis par une coopérative à Lahonce, à quelques kilomètres de Bayonne, au bord de l'Adour. Nous respectons les animaux Avec la FIPSO, notre partenaire porcin installé dans le Béarn, qualité d'élevage ET respect de l'animal sont primordiaux. La FIPSO a développé une activité d'élevage et d'abattage régionale. Les porcs sont nés et élevés dans tout de Sud-Ouest, en semi liberté, sur parcours herbeux. L'alimentation est 100% végétale, sans OGM, sans antibiotique. Beaucoup des céréales, dont le maïs, sont cultivées localement. Grâce à une longue durée d'élevage, la viande est plus tendre, goûteuse, pour la satisfaction de nos gourmets. Nous respectons les éleveurs et l'environnement Un bon modèle économique permet que tous les acteurs de la filière vivent bien de leur travail. Et pour participer au cycle naturel, l'agriculteur va alterner sur ses parcelles élevage en liberté et production de céréales. Le Porc Fermier du Sud-Ouest (PFSO - Label Rouge) que je transforme est l'assurance du respect de l'animal, de l'environnement et de l'agriculteur. Le consommateur est respecté Vous ne trouverez dans ma boutique que des produits élaborés, cuisinés exclusivement dans mon atelier. Les recettes que j'emploie sont les plus simples et les plus traditionnelles. Du vrai fait maison. Je ne fais aucune revente, pas de sous-traitance, et ne vends mes produits qu'en direct auprès des consommateurs. Je cuisine confits, pâtés, Foies Gras, rillettes ... en conserves stérilisées qui vous garantissent goût et longues conservations. Je prépare jambon, ventrèche, saucissons ... que je conditionne sous vide pour une expédition sans risque. Et si vous venez en vacances au pays-Basque, passez me voir à Bayonne!
